Cumin, chili powder, canned tomatoes, tomato paste, canned chili beans, canned corn, cayenne pepper, prepared bacon bits, canned beef broth, beer, hot sauce, brown sugar, Worcestershire sauce, dried basil and oregano

Recipe Ingredients

3 (15 oz) cans chili beans
1 (15 oz) can chili beans in spicy sauce
2 (28 oz) cans diced tomatoes with juice
1 (6 oz) can tomato paste
1 (15 oz) can corn
4 cups beef broth
1 tablespoon bacon bits
1 12 oz beer, your choice
*(I used Rogue's Dead Guy Ale, no pun intended)
3 tablespoons chili powder
1 tablespoon Worcestershire sauce
2 teaspoons hot pepper sauce
1.5 teaspoons garlic powder
1 tablespoon dried oregano
1 teaspoon dried basil
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1 teaspoon cayenne pepper
1 tablespoon brown sugar
optional-  corn chips for garnish


1)  In a large stock pot, add chili beans, tomatoes and tomato paste. Mix well.  Add bacon bits, beef broth and beer.  Season with all the other ingredients listed above. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.  If on grill or campfire, add coals or firewood as needed.
2)  After 2 hours, taste and adjust salt pepper and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve with crushed corn chips if desired.
